A Date with Lucy

Lucy and I have been friends since high school. We share similar inclinations in terms of food, life, health and happiness. And so, every now and then (and not nearly often enough) we get together to talk about food, life, health and happiness. Our hopes and fears, too. Luce and I support each other, and I adore her inspiring musings on yoga. It's really nice to just hang with someone who gets it, you know?

This past week I visited Lucy's family home and we made green smoothies and coconunt flour pancakes. Lucy's parents' garden is a lush treat and her mum has such gorgeous utensils - prop heaven! We created the most nourishing morning, sitting in gentle sunshine with open hearts and full bellies, talking dreams.

Lucy's Green Smoothie

Serves 1 as a meal or 2 as a snack

Ingredients
1 handful Spinach Leaves (young, baby ones are best if you're going to be drinking them)
1 Banana, frozen
1/2 cup Blueberies, frozen
1 heaped tablespoon Raw Cacao Powder
1 tablespoon Gogi Berries
1-2 cups Coconut Water, depending on your desired volume (or regular water or milk)

* Optional: Vital Greens Powder, Chia Seeds. * Tip: add rolled oats to make this a filling breakfast

Method: puree all the ingredients in a blender until smooth. Dang, that was easy and delicious!
