Put Tabasco On It

We’re a pro-Tabasco household. When in doubt, put Tabasco on it. Fried rice? Sure. Eggs? Niiiice. Fish tacos? Heck yeah.

I’ve been told the green Tabasco is a bit lame. Though that’s not really the right word. I wanted to tell you I have been called a pussy for going for the mild, green Tabasco as opposed to the hot red stuff (fair call)… but was trying to be a little more genteel than that, and so I put “pussy” into a synonym generator website. Don’t do that.

The point is we favour the green chilli sauce but will accept all Tabasco offerings. It’s a new love, this Tabasco business, but it’s a sure thing. One or two bottles live permanently in our fridge door, keenly clinking as we open it, reminding us to add a little to any and all of our dishes. Though I’m yet to make Tabasco porridge. And I don’t think I will.

Last week I made roasted sweet potatoes for dinner, loading them with black beans, spiced flathead fillets (from our local fish guy, who I’ll talk about in an upcoming post), smashed avocado and coriander, with a side of garlicy sauteed zucchini (the first of our CSA harvest from Transition Farm!). That meal begged for Tabasco and so we obliged, liberally. Tabasco is like salt in that it lifts the dish, vividly, making every mouthful more jazzy. Pizazz, that’s what it gives. Even the green, mild Tabasco.

When in doubt, put Tabasco on it.

Happy weekend, folks. I’ll baking and eating bread, and hopefully watching this. I’m fairly certain Tabasco will be used at some point.

    I ate some gorgeous mussels today and was picking apart the flavours and couldn’t put my finger on one particular quirk – tabasco! YES! Thank you.

    Sometimes being a pussy is OK. Like, when it comes to raw onions. Just saying.

    Red Tabasco is where it’s at, though. If you can stomach a visit to Costco they sell the huuuuuuge bottle. Of course from the outside it looks like way too much, trust me, it goes fast 🙂 Your fish guy sounds great – can’t wait to hear more about him!

    Ummmmmmmm so in high school I totally went through a phase of making tabasco rolled quinoa topped with cheese for breakfast. And one of my earliest blog recipes was tabasco peanut butter cookies.

    ps my feminist hackles raised so high at the “pussy” comment, but then I started laughing at the synonym generator bit so, bullet dodged for whomever it was who said that to you xo

    Yet another reason why we are so similar! I constantly have Tabasco at the table… I love it on everything from chips to eggs to avocado with lemon zest, even splashed over some hot fried halloumi. Aaron, on the other hand, is a bit anti-chilli. I need to make reeeeeally mild chilli for him to enjoy it or he spends the entire meal with a glass of milk and a red nose. Actually, come to think of it I haven’t tried the green Tabasco. Maybe I should buy another bottle – red for me, green for him. Perfect.
    P.S that sweet potato with black beans and fish sounds DIVINE. I might make that for dinner tonight, sans fish (as I don’t have any. Sad face. More beans it is) xxx
