Chocolate Chips in My Banana Bread

January 21, 2015

Because sometimes chocolate chips trump walnuts.

Spelt and honey banana bread with chocolate chips – this recipe with about 1/3 cup milk chocolate chips added. I probably would have used dark if I had them but I didn’t and it was wonderful all the same. Also, I messed up and used to big a baking tin, so it’s slightly smaller and a little too brown on the edges. Still, outrageously good.

A mini cheese and spinach quiche. I once baked a banana bread in a oversized loaf pan as well. It was a new pan and I didn’t even know loaf tins come in various sizes. I haven’t used it again since.

    Hi Heidi,

Just checking with your recipe for the banana, spelt and honey loaf can walnuts be used just as easily and if so how much would you recommend.

Also a random question, I know previously you have stated that you do not drink a lot of coffee during the week-do you still keep this up? Is this just to avoid the extra dairy intake or to avoid becoming addicted.

Sorry for the randomness- its turned into terrible weather where I’m from so instead of working I am dreaming about weekend baking and coffee dates–great for my entertainment not so great for the career 😉

hehe no worries, kate! Yes use walnuts, for sure! Generally you can add like 1/2 heaping cup, or more, I shouldn’t see why it’d a problem. The smaller they are the easier, I’d think. If you add a tone maybe add more liquid? Not sure, sorry, have never tried. I do drink coffee daily these days. I began to LOVE it in America when I’d drink French press style. It can be tricky, if you find yourself getting addicted & headachy maybe try every second day? & I only try to have one. But I love it, so I’m cool with that 🙂 Also if you’re dairy intolerant, try a different milk or go black. I’m sweet with dairy so I don’t worry about that x
